Coffee cake

Ingredients:

For the cake:

  • 1 cup flour
  • ¼ cup unsalted butter
  • 1 egg
  • ½ cup brown sugar
  • 1 tsp cinnamon
  • ½ cup Greek yogurt
  • 1 1/2 tsp vanilla
  • 1tsp salt
  • 1 tsp baking soda


Crumb topping:

  • ½ cup flour
  • 1 tsp cinnamon
  • 1/8 cup sugar
  • Pinch of salt
  • ¼ cup pf brown sugar
  • ¼ cup melted butter

Directions:

  • Add all dry ingredients into a small bowl and mix. Set aside
  • Cream butter and sugar until smooth. Continue to mix and add the egg, vanilla extract, and Greek yogurt
  • Add dry ingredients to the wet ingredients
  • Fold till smooth
  • Place batter into a greased pan and smooth the batter
  • Add crumb topping to the cake
  • Bake at 350F for about 35 to 40 minutes or until top is golden brown and a toothpick inserted near the center comes out clean

To make the crumb topping:

  • In a bowl add all the crumb topping ingredients
  • Mix together until crumb topping comes together
